These chocolate cookies are almost like a candy – the creamy texture is like eating fudge. Since you don’t have to bake them, they can be ready to eat in no time. Although no bake cookies are a recipe we all remember from childhood, this recipe has some surprising ingredients.
The secret to no bake cookies is to cook the sugar syrup long enough that it adheres to the other ingredients, then sets enough to hold everything together. The oatmeal provides the bulk and the rest of the ingredients can vary so that every time you make them, they can be a different taste. Use what you have in your pantry and refrigerator to make them wonderful -- coconut, caramel, chocolate chips, butterscotch chips, chopped up Heath bar, marshmallows, marshmallow cream, dates, etc. The basic recipe can be added to and enhanced in an endless amount of ways.
Maybe it’s a bit of a stretch, but it feels like these cookies may almost be good for you. Oatmeal, raisins, and peanut butter – all healthy!
No Bake Cookie Recipe
Ingredients for No Bake Cookies:
- 2 cups sugar
- ½ cup unsweetened cocoa
- ½ cup milk (or cream)
- ½ cup butter (don’t soften first)
- 1 tsp. vanilla
- 3 cups old fashioned oatmeal
- 2/3 cup peanut butter
- ½ cup raisins
- 1 cup miniature marshmallows or 1 cup marshmallow crème (optional)
- Coconut (optional)
- M&Ms (optional)
- Chopped dates (optional)
Directions for No Bake Cookies:
In a large saucepan over medium heat, stir and bring to a boil the sugar, cocoa, and milk. As soon as the ingredients are boiling, add the butter and stir continually until it is melted. Bring to a boil, and boil for 2 minutes without stirring.
Remove the pan from the heat, and add the vanilla, oatmeal, peanut butter, raisins, and marshmallows (is using). Drop by spoonfuls onto foil to cool.
