These simple chocolate chip cookies are such a surprise to everyone who eats them – they are absolutely delicious. To make them even better, they are the easiest cookie recipe you will ever make – they practically bake themselves! That, plus the fact that they are low in fat and contain chocolate chips makes them about as perfect as you can get. And for the people who need gluten free? Here you go – these are fabulous!

Whenever you’re working with egg whites, make sure that you let them reach room temperature before using them – this will help them reach the maximum volume when you’re whipping them. The best way to do this is to separate the eggs and let the whites sit in the bowl for about 20 – 30 minutes prior to making the recipe. (And a reminder to everyone that you have to use metal beaters/utensils and a grease-free bowl to whip egg whites.)

For those of you looking for a low fat, gluten-free way to satisfy your sweet tooth, this is the recipe to make. Use dark chocolate chips and you will have a nearly healthy cookie or, at the very least, a guilt-free sweet.

Because of the way these cookies are baked, they are sometimes called the “Forgotten Cookie”. Meaning that you put them in the oven, turn the oven off and go to bed. Just don’t forget they are in the oven before you turn it back on! Better put a visual clue (like another cookie pan) sitting on top of the stove or a note stuck to the oven door.

Chocolate Chip Meringue Cookie Recipe

Ingredients for Chocolate Chip Meringue Cookies:

  • 2 egg whites, room temperature
  • ½ cup sugar
  • 1 cup chocolate chips or chopped chocolate

Directions for making Chocolate Chip Meringue Cookies:

Preheat the oven to 350 degrees. Line a cookie sheet with parchment paper or aluminum foil.

Beat the egg whites until they are fluffy (soft peaks). Slowly beat in the sugar. Continue beating until the egg whites are stiff. Stir in the chocolate pieces.

Drop by teaspoon at least two inches apart onto the prepared cookie sheet. Place the cookie sheet in the oven. Turn the oven off and leave the cookies in the oven overnight. DO NOT OPEN THE OVEN UNTIL THE MORNING!
