A creamy layer of mint between two layers of chocolate make this mint brownie recipe beautiful and absolutely delicious! The bottom layer is a moist and fudgy chocolate. The second layer is a minty frosting, which is covered with the third layer of milk chocolate. These brownies are so amazing – they literally melt in your mouth!

One bite of these brownies and you will never forget them – you will keep this in your recipe file forever. Though this is not a holiday dessert, the green mint layer adds to a festive look. Because of this, these are perfect for a holiday buffet table or in a goodie tin for gifting.

When using food coloring, the gel type works best. Gels give a good color without adding extra liquid to the mixture. Remember that it only takes a drop or two of food coloring to give you the perfect hue

Chocolate Mint Brownie Recipe

Ingredients for Chocolate Mint Brownies:

Brownies

  • 4 squares (4 ounces) unsweetened chocolate, melted and cooled
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 2 tsp. vanilla
  • 1 cup flour

Mint Layer

  • 4 tablespoons butter, softened
  • 2 cups powdered sugar
  • 1 tsp. peppermint extract
  • Green food coloring
  • 2 - 4 tablespoons milk or cream

Chocolate Layer

  • ½ cup butter, melted
  • 12oz. package milk chocolate chips
  • 2 tsp. vanilla

Directions for making Chocolate Mint Brownies:

Preheat oven to 350 degrees. Grease and flour a 9x13 baking dish.

In a large bowl, place the chocolate and butter – put in the microwave for 1 minute. Remove and stir together until the chocolate is melted. If necessary, return to the microwave for 20-second intervals – stirring in between times – until the chocolate is completely melted. Add the sugar, eggs, flour, and vanilla and whisk together until well combined. Spread the mixture in the bottom of the prepared baking pan. Bake for 25 – 30 minutes. Cool completely.

In a small bowl, beat together all the ingredients for the mint layer. Spread on the cooled brownies. Cover with plastic wrap and refrigerate for 1 hour.

Put the butter, chocolate chips and vanilla for the topping together in the top of a double boiler or in a bowl to microwave for 1 minute, stir and microwave for 20 second intervals until completely melted. Spread over the mint layer. Allow to stand for 1 hour prior to serving. Cut into squares.
