Chocolate cookie bars? Now try chocolate cookie bars with a layer of butter cream and another layer of chocolate! These no-bake bar cookies are layers of deliciousness that all taste so wonderfully together. It’s like a little piece of chocolate heaven. They are actually called Nanaimo Bars.
Nanaimo bars originated in Nanaimo, British Columbia, Canada – a recipe can even be found on Nanaimo’s website! Created in the 50s and printed in a local cookbook, Nanaimo bars quickly became a favorite confection of Canada. Variations of the ingredients and flavors of the filling can be found wherever these amazing bars are sold.
Nanaimo Bar Recipe
Ingredients for Nanaimo Bars:
- ½ cup butter, softened
- ¼ cup sugar
- 1/3 cup unsweetened cocoa powder
- 1 egg, lightly beaten
- 1 tsp. vanilla
- 2 cups graham cracker crumbs
- 1 cup sweetened coconut, shredded
- ½ cup walnuts or pecans, finely chopped (optional)
- ¼ cup butter, softened
- 2 – 3 tablespoons milk or cream
- 2 tablespoons instant vanilla pudding powder
- ½ tsp. vanilla
- 2 cups powdered sugar
- 1/4 cup butter
- 1 ½ cups milk chocolate chips
- 1 tsp. vanilla
Directions for making Nanaimo Bars:
Butter or spray a 9 inch x 9 inch dish with non-stick vegetable spray.
Bottom Layer: In a very large saucepan over low heat, melt the butter. Remove from heat, stir in the sugar and cocoa powder. Gradually whisk in the egg. Return to low heat and cook – stirring constantly – until the mixture thickens a bit – 1 or 2 minutes. Remove from heat, stir in the vanilla, graham cracker crumbs, coconut, and nuts (if using). Press into the bottom of the prepared dish. Cover with plastic wrap and refrigerate for 1 hour.
Middle Layer: In a large mixing bowl, beat all ingredients until smooth. If the mixture is too thick to spread, add a bit more milk or cream. Spread the filling over the bottom layer. Cover and refrigerate for 30 minutes.
Top Layer: Put all ingredients into a microwavable bowl. Microwave for 30 minutes. Stir until completely melted and mixed together. (Microwave for increments of 15 seconds if necessary to completely melt the chocolate.) Spread on the top of the bars and refrigerate for 20 minutes more.
Cut into squares to serve.
