Panini's are good. Meatball subs are good too. This recipe combines them both. Truly the best! If I have to say so myself, this is the most amazing Panini, hoagie or sub I’ve ever tasted! That is, if you enjoy chipotle peppers. And Yes, you can make it all on your own, it’s so easy! I’ve laid all the instructions down in a really simple way so everyone can enjoy this treat just like my daughter and I in a couple of easy steps. Chipotle Meatball Panini’s
6-8 slices of Panini bread
1lb Italian ground meatloaf mix -- a blend of ground Beef, Pork and Veal (sold at Giant grocery stores and most stores)
1 package of Provolone cheese slices
1/3 red/white onion sliced or diced (amount optional: use amount you would like on your sandwiches)
¼ cup white onion (finely chopped)
1 medium/regular sized jar of Marina sauce (I use”Victoria’s” brand... flavor—Arrabbiata. I used the whole jar, but there was a lot of sauce left after making sandwiches so you could either save sauce or use half a jar instead.)
1 can of chipotle peppers in adobo sauce..but.. (you will only need to use 2 or 3 finely chopped with 2-3 tablespoons of sauce) remove stem, seeds okay.
¼ cup Chopped bell peppers (finely chopped)
¼ cup Cilantro (finely chopped)optional.
Compound butter to spread on Panini bread before toasting ( ½ stick of softened butter , 1 tbl garlic powder, ½ tsp parsley mixed together)
Salt and pepper to taste
In a medium bowl, mix meat with 2 chopped chipotle peppers and 2-3 tbl of adobo sauce, chopped onion, cilantro, bell pepper, salt and pepper. (Don’t need to use a whole lot of salt as the adobo sauce is full of it’s goodness). Mix well. Form meatballs into the size that will fit your sandwich. I find that a large tablespoon will work to exact a size. Place meat and sliced onions in pyrex or oven pan and bake meatballs until done on 350 degrees (about 20-33 minutes). Drain extra pan juice from pan when removing from oven after cooking is done. You may wait until pan cools a bit to do so. Once cool and pan juices are drained, add (Victoria’s) marinara sauce. Place pan with meatballs and sauce back in oven until sauce is warm. Once sauce is heated throughout, take pan out of oven and place aside.
Now, spread compound butter on slices of bread. Open faced, begin to toast the bread in oven placing cheese slices on top for 1 or two minutes, checking halfway between to keep from over browning. Take toasted bread out of oven and set aside.
Your ready now to build your sandwhich! Simply scoop meatballs and sauce onto your Panini bread and enjoy.
