Trying to wean your family off of high fat holiday dishes? Pour this over any vegetable and no one will miss the traditional cream of anything vegetable.
Makes about 3 cups
4 large heads garlic or 10 ounces (about 1 3/4 cups) peeled garlic cloves
2 or 3 cups fruity olive oil
1 teaspoon salt
1/2 cup fresh lime juice
1 chipotle in adobo sauce chopped
Chop the garlic into fairly small bits and saute in the olive oil until light brown, at this point add the lime juice , cook an additional few minutes and then add the chipotle pepper and leave on the heat for one more minute. Remove and allow to cool. You can pour off one cup of the oil for dressing and cooking. The remaining garlic mixture is wonderful over any vegetable. You can thin the mixture if everyone in your family isn't trying to resist vampires. It's great and not too spicy either. It will last in the refrigerator for about three months as long as the garlic is submerged.
Instead of that soupy green bean dish ..what about this; green beans, caramelized onions (sauteed in the garlic oil) topped with walnuts and some of the crunchy garlic bits and maybe a touch more lime juice. Can be served hot or cold no one will miss those canned fried onions --really!
