Earlier this year the Miami Dolphins partnered with Chillean Winery Santa Rita as well as Doral, Florida based Badia spices. The most exciting part of this is partnership is the endless possibilities of tailgating food and wine pairing.
With the Dolphins edging closer to the playoffs this partnership is even more interesting. Which wines and foods go best with the next few games that hold the fate of the Fins chances of going to the next round, the playoffs.
This Sunday, December 15 @ 1pm the division leading New England Patriots come to Sun Life Stadium. To take on Tom Brady and his Patriots a hard hitting full-bodied red wine needs to take on this strong team. Try a spicy dry rub of Badia spices rubbed into a rib eye with Santa Rita 120, Syrah 2012. Since it might be warm, fish can be seasoned with lemon and salt and thrown on the tailgating grill. Santa Rita 120, Sauvignon Blanc, 2013 is dry and crisp, plenty of citrus notes and a palate cleanser that will leave you satisfied as you enter the stadium.
On December 22 the Fins visit the frozen tundra of Ralph Wilson Stadium in Buffalo, NY. Are Buffalo wings on the menu for game day? Santa Rita 120, Chardonnay will have a cooling effect for the spiciness of the wings. Buffalo is also a working class city of many Eastern European natives with their spiced blends of different sausages and cured meats. Santa Rita 120, Cabernet Sauvignon or Merlot with their firm tannins and complexity pair perfectly with these meaty treats fresh off the tailgating grills.
December 29 at 1pm brings the Miami Dolphins number one rival, the New York Jets to Miami. Chicken, pork or beef kabobs with fresh vegetables Badia Olive Oil and spices should be on the grill for this one. For a big rival with a lot of history a wine with a lot of history needs to be served. Carmenere, a grape that was once a part of the Bordeaux blend of grapes was planted in Chile, before the louse phylloxera wiped out many of Europe’s grape vines, including Carmenere that grew in Bordeaux was planted in Chile before phylloxera struck. A classic game needs a classic grape, so Carmenere is the perfect wine for the tailgate kabobs.
But what do you do once inside the stadium? Santa Rita wines are available at all the club level bars and if you are really lucky, in the suites as well.
So fire up your grills when you get to the stadium and enjoy Badia spiced food and Santa Rita’s 120 line of high quality Chilean wines
