A chicken sandwich is a chicken sandwich unless it is combined with all those ingredients that make it amazing. This sandwich combines chicken, onions, peppers, and a wonderful cheese – ingredients that meld together to make it fabulous!

This isn’t a sandwich that belongs on just any bread. Ciabatta rolls, sour dough rolls, focaccia bread -- each of these would add to the taste. Make sure that whatever you use is good on its own. A sandwich shouldn’t be bread-heavy. The ingredients should be the star of the show, but the bread should be hearty and delicious.

A secret ingredient of this sandwich and of many wonderful recipes is Boursin cheese spread. The flavor is delectable and it adds the final, perfect touch to the chicken. Boursin is found in most super markets in the cheese section. Although it comes in many flavors, garlic and herb is used in this recipe. You will love this cheese so much that once you try it, you’ll buy it often.

The recipe calls for chicken tenders – basically boneless, skinless chicken breasts that are cut in strips. If using the whole breasts, cut it in strips prior. The smaller pieces work better.

Chicken Sandwich Recipe

Ingredients for the Chicken Sandwich:

  • 2 pounds chicken tenders
  • ½ cup flour
  • 4 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 red bell pepper, julienned
  • 1 medium onion, chopped
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. rosemary
  • 1 tsp. oregano
  • Ciabatta rolls
  • Boursin cheese spread (garlic and herb flavor)

Directions for making the Chicken Sandwich:

In a large skillet heat the olive oil a very little bit, then add the minced garlic, red pepper strips, and onion. Cook for 5 minutes.

Put the flour in a plastic bag or on a plate to coat the chicken pieces with the flour.

Move the onion and pepper to the sides of the skillet, put the flour-covered chicken in the bottom of the skillet. Allow to brown on one side, then flip to the other side. Once browned on both sides, add the salt, pepper, rosemary, and oregano. Stir the mixture together and allow to cook until the peppers and onions are limp. (Don’t allow the chicken to overcook, or it will become dry.)

Toast the sandwich rolls, then spread both halves with the Boursin cheese. Put the chicken strips in the single layer over the bottom half of the bun, then arrange the onions and peppers on top. Cover with the top half of the bun. Enjoy!
