Chicken Salad with Olives & Artichokes

Chicken salad is the perfect healthy snack food to enjoy all summer long. This recipe packs in olives and artichokes for a meditation-style experience. Enjoy!

Ingredients

  • 4 cooked chicken breasts, sliced
  • 12-ounce jar of marinated artichokes, drained
  • 1/2 cup olives jubilee, sliced in half
  • 1/2 cup mayonnaise
  • Juice of ½ a lemon
  • 2 tablespoons chopped parsley
  • 1 teaspoon minced garlic
  • Salt and pepper to taste

Directions

Gently toss chicken with artichokes and olives in a large bowl. In a separate bowl, combine mayonnaise with lemon juice, parsley and garlic. Toss mixture with chicken. Add salt and pepper to taste.

Creates five servings
