Chicken salad is the perfect healthy snack food to enjoy all summer long. This recipe packs in olives and artichokes for a meditation-style experience. Enjoy!
- 4 cooked chicken breasts, sliced
- 12-ounce jar of marinated artichokes, drained
- 1/2 cup olives jubilee, sliced in half
- 1/2 cup mayonnaise
- Juice of ½ a lemon
- 2 tablespoons chopped parsley
- 1 teaspoon minced garlic
- Salt and pepper to taste
Gently toss chicken with artichokes and olives in a large bowl. In a separate bowl, combine mayonnaise with lemon juice, parsley and garlic. Toss mixture with chicken. Add salt and pepper to taste.
