Try chicken hash for an amazing chicken dinner

If you’re ever going to develop a craving for something, it will be for this chicken hash! Wow! It’s a simple, but perfect mixture of chicken and potatoes and it is amazing with a capital A.

Most people are only familiar with corned beef hash, and don’t think of it for other types of meat. Hash is simply a chopped-up mixture of meat and vegetables (derived from the French word hacher, which means “to chop”). During WWII, fresh meat was harder to come by than canned meat, so corned beef hash became a very popular dish. Hash is now common on more sophisticated menus and served for breakfast, brunch or dinner.

If you want to save time, pick up a roasted whole chicken at the local grocery store. Most stores have them and they are perfect to chop up and use in recipes.

Chicken Hash Recipe

Ingredients for Chicken Hash:

  • 6 tablespoons butter, divided
  • 4 medium potatoes, raw and diced
  • ½ red bell pepper, diced
  • 1 small onion, diced
  • 2 – 3 cloves garlic, minced
  • ½ tsp. thyme
  • 1 – 1 ½ tsp. paprika
  • 3 cups chicken, cooked and diced
  • 3 tablespoons olive oil
  • 2 tsp. salt, divided
  • 1 tsp. pepper, divided
  • Sour cream and shredded cheddar cheese, for condiments

Directions for making Chicken Hash:

In a large skillet, melt 4 tablespoons of the butter over medium heat, then add the potatoes, onions, garlic, 1 tsp. salt and ½ tsp. pepper. Cook this mixture, uncovered, flipping the ingredients occasionally, until evenly golden brown and cooked through. It takes about 20 – 25 minutes.

In the meantime, in a small skillet, melt the remaining 2 tablespoons of butter over medium heat and cook the red bell pepper with the thyme, paprika, 1 tsp. of salt, and ½ tsp. of pepper. Cook, stirring occasionally, until the pepper is limp. (About 6 – 10 minutes.)

Once the potatoes are golden brown and crispy, add in the diced chicken and the red bell pepper mixture. Drizzle with the olive oil and mix enough to incorporate all the ingredients. Taste, and then add additional salt and pepper, if needed.

Serve warm with shredded cheddar cheese and sour cream for condiments. If serving for breakfast, this is perfect topped with a poached or fried egg.
