Traditional chicken cordon bleu is chicken with ham and cheese baked inside. Here’s a way to make this delicious dish in a lot less time, with a lot less hassle! The moist chicken, the ham, the cheese – it’s all there – you’ll just be eating it in half the time! A guest to the Rachael Ray Show, Sunny Anderson, is credited for this recipe on the show’s website.

Cordon bleu is actually any meat baked around a cheese filling. Veal cordon bleu first showed up in a Swiss cookbook in the late 40s. Chicken cordon bleu became popular in the 60s. Cordon bleu is French for “blue ribbon”.

One of the secrets to this recipe and to the classic chicken cordon bleu is to pound the chicken to no more than 1/2-inch thick. For this recipe, it allows for a shorter cooking time and, at the same time, pounding the chicken prior to cooking it breaks down the fibers to make it very tender.

Sunny Anderson’s Easy Chicken Cordon Bleu Recipe (from the Rachael Ray Show)

Ingredients for Easy Chicken Cordon Bleu:

  • 1 cup flour
  • Salt and pepper
  • 2 eggs
  • 2 tablespoons whole grain mustard
  • 1 tsp. paprika
  • 3 cups Panko breadcrumbs
  • 4 chicken breasts, skinless, boneless and halved
  • Peanut or vegetable oil
  • 16 slices thinly sliced deli ham
  • 8 slices Swiss cheese

Directions for making Easy Chicken Cordon Bleu:

Put the 8 chicken breast halves in a large plastic bag, 2 at a time, and pound them with a meat mallet or a rolling pin until they are ½ inch thick.

In a shallow bowl, stir together the flour, ¼ tsp. salt, and ¼ tsp. pepper. In another shallow bowl, stir together the eggs, mustard, paprika, a dash each of salt and pepper. In the third shallow bowl, add the panko.

In a large skillet, add the oil to cover the bottom of the pan by about ¼ inch. Heat over medium-high heat.

Cook the chicken pieces in batches of no more than 3 or 4 (do not crowd the pan). Dredge each piece of chicken first in the flour, then the egg mixture, then coat well with panko. Cook for 3-4 minutes on each side, then transfer to a baking sheet.

Once all the chicken pieces have been cooked, turn the oven on broil. Top each piece of chicken with 2 slices of ham, then with 1 slice of cheese. Place the pan under the broiler until the cheese is a bit bubbly (about 3 minutes). Enjoy!
