Chicken with a crispy coating is always a favorite -- now take a beloved snack and combine the two! This is double yum! Pretzels make a wonderful coating, as they don’t grind up to a fine powder, but keep a bit of texture. The flavor of the pretzels makes this such a delicious pairing.

Sour cream adds a perfect touch to this recipe – and, really, to any chicken recipe. The acidic nature of sour cream tenderizes the chicken. (You can actually marinate chicken in sour cream or milk prior to using it in any recipe.) Fat free sour cream works just as well as regular.

In addition to the sour cream, the chicken is first pounded to ½-inch thickness prior to baking. This breaks down the fibers in the chicken and is a great way to tenderize it as well. (Put the chicken in a plastic bag and pound it with a meat mallet or other heavy object until it is a uniformed thickness.)

Be sure to use crunchy pretzels for the coating. The bready ones would probably taste great, but wouldn’t work quite the same. Put the pretzels in the food processor and pulse it a few times. You could also put them in a plastic bag and roll over them with a rolling pin or smash them with a meat mallet.

Pretzel Coated Chicken Recipe

Ingredients for Pretzel Coated Chicken:

  • 2 large chicken breasts, boneless and skinless (cut in half and pounded to ½-inch thick)
  • 2 cups pretzel crumbs
  • 1 cup sour cream
  • Olive oil
  • Garlic powder
  • Salt/pepper

Directions for making Pretzel Coated Chicken:

Preheat the oven to 375 degrees. Use olive oil to coat the inside of a 9 x 13 baking dish.

Put the sour cream in a bowl and the pretzel crumbs in another bowl. Dip each of the 4 halves of chicken first in the sour cream to coat all over, then in the pretzel crumbs. Put the chicken breast halves in a single layer in the prepared baking dish. If there are any pretzel crumbs left, press them evenly over the tops of the chicken breast halves.

Sprinkle each piece of chicken with the garlic powder, then with the salt and pepper (be careful not to use too much salt, as the pretzels are coated with salt). Lightly drizzle each chicken piece with olive oil.

Bake uncovered for 40 minutes.
