This chicken recipe looks so beautiful and is so delicious that it seems like it must be difficult to make, when in fact it couldn’t be easier! This simple recipe has only a very few ingredients. It is a perfect recipe whether you are entertaining or if you are just cooking for your family or yourself. It is such an elegant, wonderful presentation, but the best thing is that it is absolutely scrumptious.
Although the star of this show is the chicken, the leading co-star is puffed pastry. Available in the freezer section of most any grocery, puffed pastry (sometimes called phyllo dough – although there is a bit of a difference) is made from layers of papery-thin crust. It bakes golden brown and flakey, with a lovely buttery taste.
Easy Herbed Chicken in Puff Pastry Recipe
Ingredients for Easy Herbed Chicken:
- Frozen puff pastry sheets, thawed
- 3 tablespoons olive oil
- 3 chicken breast halves, skinless and boneless
- Cream cheese
- Garlic powder
- 1 egg
- 1 tablespoon water
Directions for making Easy Herbed Chicken:
Preheat the oven at 400 degrees. Lightly grease the bottom of a 9x13 baking dish.
In a large skillet, heat the olive oil over medium heat, then add the chicken breast halves in a single layer. Cook for 5 minutes on one side, then on the other for 5 minutes. Sprinkle both sides of the chicken with salt, pepper, and garlic powder. Refrigerate for 15 minutes. (This is an important step so that the chicken breasts are cooled before wrapping in the pastry.)
Unfold the pastry and cut each sheet into 3 strips. Cut a slice of the cream cheese and place in the middle of a strip. Add the chicken on top of the cream cheese and roll the pastry around the chicken. Place seam-down in a greased baking dish.
In a small bowl, break the egg and add the water – whisk. Brush on the top of the pastry-wrapped chicken. Bake at 400 degrees for 25 minutes. Let cool for 10 minutes prior to serving.
