This chicken casserole recipe was a staple in the 70s – a comfort recipe like no other! The sauce is yummy, the chicken and rice are delicious, then top it all off with those crunchy chow mein noodles – this is pure yum! The perfect combination of chicken, sauce, and crunch.

As with all casserole recipes, you can mix and match the ingredients to meet your own tastes and to use whatever ingredients you happen to have on hand. Combine everything with the sauce and top it with the chow mein noodles and voila your dish is complete. The noodles and the sauce are the secrets here.

If you don’t have leftover chicken, not to worry! Every grocery store seems to have those rotisserie chickens that are pre-cooked and seasoned. These chickens are perfect for cutting up and using in casseroles or other chicken recipes.

The chow mein noodles are found in the international aisle of the grocery store. If you have any leftover from making this recipe, use them as a crunchy topping on salads or make them into haystack cookies – maybe some of the best cookies ever invented!

Chicken Chow Mein Casserole Recipe

Ingredients for making Chicken Chow Mein Casserole:

  • 5 cups cooked chicken, cut in bite-sized pieces
  • 2 packages long grain and wild rice mixes
  • 3 10-oz. cans cream of chicken soup
  • 2 cups mayonnaise
  • 2 tablespoons lemon juice
  • 3 cups corn
  • 6 cups chow mein noodles

Directions for making Chicken Chow Mein Casserole:

Preheat the oven to 375 degrees. Grease the bottom and sides of a large casserole dish or a 9x13 baking dish.

In a large pot, cook the rice according to package directions. When the rice is cooked, add the chicken pieces, cream of chicken soup, mayonnaise, lemon juice, and corn. Stir all ingredients well to incorporate them together thoroughly. Put the mixture into the prepared baking dish. Evenly sprinkle the chow mein noodles over the top. Bake at 375 degrees for 45 minutes or until warm and bubbly. Serve warm.
