Chicken recipe: Chicken divan is a casserole to die for

This delicious chicken recipe is a classic. Chicken Divan is one of those comfort foods that seem to stick in your mind until you can’t wait to have it again. It’s not a complicated dish, but it has an unforgettable sauce that pulls it all together. It is a delicious and easy chicken casserole – and is perfect, as it puts the whole meal in one dish!

This is one of those recipes that use up leftovers so well. It turns leftover chicken into a completely different meal. The recipe calls for raw broccoli, but you can use cooked as well.

For those of you trying to cut calories and fat, use low-sodium soup, low-fat mayonnaise, and skip the bread crumbs on top.

And for those of you wondering where the name came from; apparently it was named after the restaurant in which it was created: The Divan Parisien Restaurant in New York City’s Chatham Hotel which closed in the 1950s.

Chicken Divan Recipe

Ingredients for Chicken Divan:

  • 4 chicken breasts, cooked and cut into bite-sized pieces
  • 4 cups rice, cooked
  • 3 cups broccoli florets, raw
  • 1 1/3 cups mayonnaise
  • 3 tablespoons lemon juice
  • 3 cans cream of chicken or cream of mushroom soup
  • 1 cup cheese, shredded (Cheddar or Co jack work well)
  • 1 cup fresh bread crumbs (made by grating bread with a cheese grater)
  • 3 tablespoons butter, melted

Directions for making Chicken Divan:

Preheat the oven to 350 degrees. Lightly grease a 9x13 baking dish.

In a medium-sized bowl, combine the mayonnaise, lemon juice, and soup. Spread about 1/3 of the sauce evenly on the bottom of the dish. Evenly layer with the cooked rice. Arrange the chicken and the broccoli over the rice. Layer with the remaining sauce; sprinkle with the cheese, then the bread crumbs. Drizzle the butter over all.

Bake uncovered at 350 degrees for 1 hour. Let cool for 15 minutes prior to serving.
