Yes, you read it right! Chicken, bananas, bacon, peanuts and a couple other surprising ingredients that pull this amazing chicken recipe all together and it is fabulous! This is a melding of some very delicious flavors and it all works so well. You will absolutely love it - better be prepared to make it again and again. This recipe will become a requested family favorite!
Otherwise known as Flygande Jacob, this is a casserole that was first published in the Swedish magazine Allt om mat in 1976. It was said to be invented by Ove Jacobsson who worked in the air freight industry, thus its strange name.
Be sure to use real whipping cream when making this dish – it will make a marked difference in the sauce. The chili sauce needed to mix with the whipping cream can be found in most grocery stores right by the ketchup (don’t try to substitute ketchup, however, as the chili sauce makes it fabulous!)
Chicken and Rice Casserole Recipe (Flygande Jacob)
Ingredients for Chicken and Rice Casserole:
- 4 cups cooked rice
- 4 chicken breasts, cooked and cut into small pieces (nearly shredded)
- 2 bananas
- 1 cup whipping cream, whipped until thick (the consistency of whipped cream)
- ¼ cup chili sauce
- 6 strips bacon, fried very crisp and crumbled
- ½ cup salted peanuts, toasted
Directions for making Chicken and Rice Casserole:
Preheat the oven to 300 degrees. Lightly oil the inside of a 9 x 13 baking dish.
Spread the peanuts in a single layer in the bottom of a small oven-proof dish and toast them in the oven until they are fragrant. Remove from oven once you can smell them.
Spread the cooked rice evenly over the bottom of the prepared dish. Evenly distribute the chicken pieces over the top of the rice.
Slice the bananas and distribute them in a single layer over the top of the chicken.
Whip the cream until thick and stir in the chili sauce. Spread the cream mixture evenly over the top of the bananas.
Sprinkle with the crumbled bacon and the toasted peanuts.
Bake at 300 degrees for 20 minutes. Serve warm.
