This chicken lime tortilla soup is a quick and flavorful broth based soup that takes a little help from the store using a rotisserie chicken. You can customize it by adding any toppings you have on hand such as crushed blue corn tortilla chips, cilantro, lime wedges, sour cream, shredded Mexican cheese and chopped green onions.

  • 1 large yellow onion, chopped
  • 2-3 bell peppers, chopped (you can use a variety of colors)
  • 2-3 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 2 boxes of high quality chicken broth
  • 1 rotisserie chicken, shredded
  • 1-15 ounce can chopped tomatoes
  • 1/2 cup salsa
  • 1/4 cup cilantro chopped
  • Zest of 1 lime
  • Juice of 2 limes
  • 1/2 tsp salt
  • 2 tbsp Olive oil

Toppings-crushed blue corn tortilla chips, cilantro, lime wedges, sour cream, chopped green onions and shredded Mexican cheese.

In large dutch oven or soup pot, drizzle olive oil and add onions, bell peppers and salt. Saute 3-4 minutes until the vegetables are tender. Add cumin, paprika and garlic. Saute for 1 minute until the garlic is fragrant. Add chicken stock, rotisserie chicken, tomatoes and salsa. Add lime zest, juice and chopped cilantro. Simmer for 15-20 min. Ladle soup into a bowl. Garnish with tortilla chips, lime wedges, sour cream, cilantro, cheese and green onions.
