Chicken lasagna recipe

This is a lasagna like no other. Have you ever had lasagna with no noodles and red sauce? Here you go:

Chicken Lasagna

  • 8 chicken tenders, skinless
  • 1 egg
  • 12 Ritz crackers, crushed
  • 4 ounces cream cheese, room temperature
  • 1/2 package of chopped spinach (10 ounce package), thawed and drained
  • 1 cup mozzarella cheese, shredded
  • 3-4 tbsp Parmesan cheese

Preheat oven to 375*.

Spray 8x8 pan with cooking spray.

Place crackers on a paper plate and egg in a bowl and beat it.

Dredge chicken in egg and then in crackers. Lay 4 tenders onto prepared pan.

In a bowl, mix cheeses and spinach.

Spread cheese and spinach mixture over chicken in the pan.

Place remaining 4 tenders over cheese mixture.

Bake for 40 minutes or until chicken is cooked through.
