Now is the time for some great garden salads. We were able to pick tomatoes, cucumbers, green and red peppers broccoli (it was running late) and make a great garden salad. We added lettuce from the farmer’s market since we are between lettuce pickings. Then we topped it with a little crumbled Gorgonzola.
Then to make a chicken salad, we cut two chicken breast lobes in half horizontally, sprinkled them with a few drops of olive oil, and broiled them until they were just done.
To make the chicken salad, we cut the warm breasts into strips, arranged them over the garden salad, and drizzled a little light poppy seed dressing (we used Olde Cape Cod brand) over the top. We served a fresh ear of corn on the side, but you could have included it in the salad if you prefer.
The whole thing took about 15 minutes and you really can’t do better for a fresh chicken salad!
