Do you love pasta? Of course you do, because pasta is amazing. This easy dish combines pasta, chicken, and asparagus in a simple, delicious combination that's easy to make and doesn't involve a heavy sauce--perfect for the warm weather's approach.
This recipe comes, slightly modified, from GOODEness Gracious.
12 oz penne (or elbow, or other similar pasta)
1 lb chicken breast, cubed
3 tsp Seasoning Salt
2 cloves garlic
Pepper, to taste
1 lb asparagus
1/4 cup plus 1 tbsp olive oil, separated
1/2 cup shredded Parmesan
Cook pasta according to package instructions, drain, and set aside. Meanwhile, cube chicken breast, if not already cubed.
Heat 1 tbsp olive oil over medium heat. Add in the chicken, seasoning salt, and pepper, to taste. Cook chicken through.
Meanwhile, steam asparagus. Also, set your oven to broil to allow time to preheat.
Once chicken has cooked, add garlic to skillet and saute for about a minute, then remove from heat.
Combine cooked pasta, asparagus, chicken and olive oil in a 9 x 15 casserole dish. Mix well, and top with parmesan cheese. Finally, pop the dish into the broiler for about 5 minutes, until cheese has melted and is just slightly browned.
Then just remove it from the oven and enjoy!
