Karen usually makes this recipe in the fall! What a great way to get your vegetables into your diet!
Karen's Power Soup
- 3 Tbsp Olive Oil
- 3 Cloves Garlic
- 1 1/2 Red Onions
- 3 Cups Each Sliced Zucchini & Yellow Squash
- 2 Cans Diced Tomatoes
- 3 Cans (or 1-32oz Box) Chicken Broth
- 6 Cups Fresh Baby Spinach
- *optional - 1-2 Boneless Skinless Chicken Breasts, Grilled and Diced
In large saucepan over medium heat add oil, garlic, onions and cook until onions are transparent, almost golden.
Add remaining vegetables, except spinach and cook until tender.
Add chicken, tomatoes, broth - bring to a boil. (Add desired seasoning)
Reduce heat and simmer 10 minutes.
Add spinach, cook until wilted.

Healthy! Yum!
This sounds so delicious. I look forward to the weather being a bit cooler before I try it though. One hundred degrees and hot soup just don't mix. lol
