This is the best chicken and dumpling recipe I have tasted! My dad gave me this recipe. My dad is a chef and has a taste for good food! It may sound complicated, but its really not. I have to say, it is worth every moment it takes to prepare.
Dad’s Chicken & Dumplings
- 1-2 lbs. boneless, skinless, chicken breasts
- Flour
- Cooking oil
- 2-3 cans of chicken stock
- 1 small onion
- Frozen veggies (your choice, I use carrots)
- 2 cups of Bisquick
- Water
- Milk
- Salt, pepper, garlic powder, parsley
Cut chicken into bite size pieces.
Dredge in flour (seasoned with spices).
Fry in oil until cooked.
Place chicken in a large pasta pot.
Cover chicken with stock.
Add spices.
Cut onion up fine, add to pot.
Add veggies.
Bring to a boil.
While coming to a boil, mix dumplings:
2 cups Bisquick
1 cup water
1 cup milk
Drop ½ of mixture by spoonfuls into pot of boiling stock.
Cover pot 5-6 minutes.
Flip dumplings.
Cover 5-6 minutes.
Remove dumplings from pot to a plate.
Cook the remaining dumpling mixture.
Simmer 20-30 minutes….stock will thicken.
