Chicken and artichokes in a lemony white wine sauce

Difficulty: Easy - Moderate
Preparation Time: 30 – 45 minutes

What you will need:

  • 1 package of chicken breasts

  • 1 small bottle of white wine or

  • 1 cup of white wine

  • (Sutter Home is a good one but any white wine will do –

  • You can omit this ingredient if you so wish)

  • 1-2 tablespoons of capers (optional and to your liking)

  • 1-2 fresh lemons (again, depending on your taste)
  • 2 cans of halved artichokes

  • Olive Oil

  • Salt and Pepper to taste

  • 1 Large saucepan or cooking skillet


How to Prepare:

Heat up the olive oil in your saucepan while you cube your chicken breasts. One you have cut up your chicken breasts, salt and pepper them if you so choose. Release your artichokes from the cans in which they have been imprisoned and thoroughly rinse them. Should some artichokes seem a bit lagre for the bite do slice them in half.

Once you have set up your main ingredients, you will first cook your chicken in the saucepan until it has browned a bit. While your chicken is cooking, squeeze in the juice of half a lemon and pour in a half a cup of the white wine. When your chicken is cooked, remove from the saucepan and add your artichokes along with the juice of the remaining half of the lemon and the last half cup of wine. Cook the artichokes until they are heated through and not too soft.

Artichokes done! Great! Now you will re-add your cooked chicken to the saucepan with the artichokes and your capers if you so wish. Fold in the chicken with the artichokes well in order that the juices from your sauce blend in nicely. Heat for another 2 to 3 minutes and serve atop your favorite rice or pasta!
