Fast-food, chains, fine-dining, mom-and-pop restaurants… I don’t discriminate between any of them unless, of course, the food isn’t any good. So when I had the opportunity to peek behind the scenes at a Chick-fil-A in Dallas, Texas, there was no way I was going to turn it down.

Chick-fil-A specializes in what I like to call the “Forrest Gump” of chicken, and they’ve added to the menu another way to enjoy: Spicy Chicken. And it’s good. It’s so very, very good.

If you’re a busy mom like Dallas’ Kimberly Ashmore, Chick-fil-A is the place to go when looking to pick up a quick, healthy dinner or after-school snacks. “The food my family consumes is a big concern for me,” she said. “We avoid carbs and sugar, and Chick-fil-A offers a variety of those menu items that my kids love to eat.”

The trend these days is fast-serve restaurants offering menu items that are healthier for you, but how good are they, really? Well Chick-fil-A isn’t hiding anything. For self-proclaimed raving Chick-fil-A fan Roland Tilden, dining at the fast service restaurant is something he does nearly every day. And with four kids, it’s Roland’s go-to restaurant when his wife is out of town. “The store and children’s play area are clean and safe,” Roland said. “Not only is the food great, but the people working here are great … going out of their way to make sure we enjoy ourselves and keep coming back.”

A native of North Carolina, Roland loves that his favorite Chick-fil-A locations keep plenty of Texas Pete (a tasty red pepper hot sauce made in his home state) in stock. “It’s next to impossible to find Texas Pete in Texas, but Chick-fil-A has it,” he said. “It’s especially delicious when mixed with the Chick-fil-A sauce … it goes perfectly with their sandwiches.”

And that’s the truth. I tried Roland’s trick on the new Chick-fil-A Spicy Chicken Biscuit and nearly came out of my chair! The succulent, hand-breaded Spicy Chicken Biscuit features the chain’s signature boneless breast of chicken seasoned with a fiery blend of peppers and spices. The Spicy Chicken Biscuit hit stores nationwide in January just six months after the chain launched their Spicy Chicken Sandwich (DIVINE!).

I accepted an invite into the Chick-fil-A kitchen on Hillcrest across from SMU to see how they make my new favorite breakfast item – hand-breaded, pressure-cooked in 100 percent refined peanut oil and served on a made-from-scratch buttermilk biscuit. Made-from-scratch? Yes, really. Every single day the good people of Chick-fil-A make their fluffy biscuits the old-fashioned way. No wonder they are so buttery, flaky and delicious!

I was pleasantly surprised to discover that Chick-fil-A uses only premium, name-brand ingredients in everything on the menu (Splenda in the diet lemonade, Oreo cookie crumbles on the shakes, etc., etc.)

Think fresh, fresh, fresh when you order from Chick-fil-A. Like their lemonade? It’s fresh-squeezed. Fresh fruit cups? Hand-cut and hand-packaged daily. Chicken wraps? Hand-made with fresh-cut vegetables and chicken.

With good food, Chick-fil-A also has good people. One of the reasons Roland and Kimberly are fans of the chain is the people – and customer Lori Foster whole-heartedly agrees. “There is so much spirit in the people working for the company, which makes me appreciate them so much more,” Lori said. “When I walk in the door, they know me by name at my neighborhood Chick-fil-A. It’s about family and I can’t say enough good things about the employees – no matter which location I happen to visit.”

Lori’s menu favorites include the breakfast Cinnamon Cluster, nuggets and iced tea. “There’s nothing in the world like their iced tea,” Roland agreed, adding that his family keeps a gallon of it on-hand at home at all times.
