Chewy gingerbread bars

1 ¼ cups sugar
½ cup shortening
¼ cup unsalted butter, room temp
2 eggs
1 ¼ tsp. vanilla
½ cup molasses, unsulfured
3 cups flour
1 tsp. salt
1 ½ tsp. cinnamon
1 tsp. ginger
¼ tsp. cloves
1 ¼ cups white chocolate chips

Preheat oven to 350º. In a mixer, cream the sugar, shortening, and butter. Beat in the eggs one at a time, then add in the vanilla and molasses. Scrape down the sides and beat until well combined. In a bowl, mix together the flour, dry ingredients. Slowly add this to the wet mixture. Remove from the mixer and stir in the chocolate chips. Line a 9x13 pan with parchment paper and fill with the batter.
