Chef Mary Nearn, Fuego at La Posada de Santa Fe

It wouldn’t be Thanksgiving without cranberries. When the Pilgrims arrived in Plymouth Massachusetts, the Wampanoag Indians befriended them and helped them to adjust to life in the New World. The cranberry, native to that part of New England, was a source of food and dye for the natives. Traditional lore holds that that cranberries were part of the first Thanksgiving dinner and they continue to be a strong part of the holiday tradition.
Fuego’s executive chef Mary Nearn shares her Cranberry Chutney recipe below. Nearn has been at the Four-Diamond restaurant at La Posada de Santa Fe Resort and Spa since May, 2008. Prior to that she was the executive chef at Miraval Resort in Tucson, and at the Equinox Resort in Manchester Village, Vermont. Her culinary philosophy is to keep it fresh and simple and let the flavors speak for themselves. Nearn has been invited to cook at the prestigious James Beard House in New York City three times.
Cranberry Apple Chutney
1 pound cranberries
1 cup water
1 cup sugar
2 green apples peeled ½ “ dice
¼ cup red wine vinegar
¼ cup Lemon juice
1/3 cup sugar
1 tbsp cinnamon
¼ tsp cloves
1 tbsp fresh ginger
Method
Combine cranberries with water and the sugar in saucepan. Bring to boil and simmer 10 minutes. Remove from heat. Combine remaining ingredients in another saucepan, cook until apples are soft and add to cranberry mixture. Allow to cool and refrigerate
This can be made ahead of time and frozen, it holds very well.

if you say the word chutney to my family, they won't eat it.
I've never made chutney before but I do enjoy eating it.
Chutney is something I have never ever made and now I am extra inspired to.
