1 lb. chicken breasts, ground
2 cups Colby Jack cheese
½ cup carrots celery, red and green bell peppers, and green onion, diced
1 cup sour cream
1 packet ranch dressing mix
Preheat oven to 350º and prep a muffin tin with nonstick spray. Form the wonton wrappers in the muffin tin and bake for 5 minutes. In a bowl, combine the rest of the ingredients and stir well. Fill the wrappers with the mixture and bake for another 25-30 minutes, or until golden brown.
