If you are looking for a wonderful recipe for your Christmas morning breakfast, this easy cheesy bacon cornbread recipe will have the whole family happy. Using thick cut bacon, and your favorite shredded cheese you can make a homemade batch of cornbread in no time. Ingredients:
6 - 8 slices thick cut bacon cut into 1 inch pieces
1 1/4 cups yellow cornmeal
1 cup flour
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
2 tablespoons melted margarine
2 cups sharp shredded cheddar (you can use other kinds here)
Preheat oven to 425°
Instructions:
Fry bacon until crisp and place on a platter line with paper towel, make sure to save a few tablespoons of the drippings. Set aside. In a large mixing bowl, combine cornmeal, flour, baking powder and salt; stir in 1 cup cheese and half of the cooked bacon. Combine egg, milk, butter or margarine and reserved drippings; stir into dry ingredients until moistened. Pour into a well-greased round baking pan, or an 8 x 8 x 2-inch baking pan. Pile the remaining cheese and bacon on the top of the cornbread and Bake for around 22 minutes or so. Cornbread should be light golden brown. Enjoy!
