Shoppers in Seattle’s Pike Place Market enjoy the spectacle of cheesemaking through the large windows at the Beecher’s Handmade Cheese shop. Beecher’s Flagship cheese is an award-winning semi-hard, cow’s milk cheese with a robust, buttery, tangy flavor. Since its introduction in 2003, Flagship is now offered in several styles including original 18-month, 4-Year Aged, Reserve, raw milk, and smoked.
In addition to Flagship, Beecher’s crafts unique cheeses such as “Just Jack”, a pepper cheese called “Marco Polo”, and Jamaican Jerk spiced “No Woman”, as well as several styles of squeaky curds and creamy farmer’s cheese. Beecher’s is also "World Famous" for Mac & Cheese in several varieties and other pasta and grain side dish or supper casseroles.
Online ordering is available through the Beecher’s Online Store. The store features all of their cheeses and side dishes, plus cheese staples including crackers, sauces, cheese boards, cheese knives, and books. In addition, the Seasonal Cheese Club features a collection of cheeses with accompaniments hand-selected by the Beecher cheesemonger. Finally, Beecher’s offers an introductory cheese course that guides attendees through an exploration of cheese, including the history and process of cheesemaking, followed by cheese sampling with wine pairing.
Beecher’s Seattle is located in the heart of the historic Pike Place Market at the corner of Pike Street and Pike Place, below Sur La Table (in the former location of the Seattle Garden Center).
