There is just something about gooey cheese wrapped in a freshly made flour tortilla that puts my heart a-flutter. Since time is always an issue with dinner preparation, this recipe for Cheese Enchiladas uses the delicious Enchilada Sauce from Trader Joe's. If you don't have a Trader Joe's in your area or you prefer a different type of sauce, you can easily substitute it for the sauce in this recipe.
Cheese Enchiladas
Serves: 4
Prep Time: 10 minutes
Cook Time: 25 minutes
Ingredients:
2 cups shredded Mexican blend cheese
1 jar Enchilada Sauce
1 small onion, chopped
8 flour tortillas (try this recipe for homemade tortillas)
Directions:
1. Preheat oven to 350 degrees.
2. In a large bowl combine cheese, 4 tablespoons of enchilada sauce and onion.
3. Pour 2 tablespoons of enchilada sauce in the bottom of a baking dish sprayed with non-stick cooking spray.
4. Divide the cheese and onion mixture between 8 flour tortillas. Roll up and place in baking dish.
5. Pour remaining enchilada sauce over tortillas.
6. Bake in the oven at 350 degrees for 25 minutes or until cheese is melted.
