Change up the brunch cocktail routine with an Aperol spritz

The Bloody Mary. The mimosa. The Greyhound, if one is feeling particularly creative on a fine Sunday morning. These are the cocktail workhorses of weekend brunch, but sometimes, the usual path can get a bit well worn. Well, here comes a new drink to save the day from tedium: the Aperol spritz. Aperol is an extremely popular aperitif in Italy, but here in America, it still flies a bit under the radar. Which means that by making this for your friends at the next boozy brunch, you'll be a bit of a trend setter.

What does it taste like? If it were possible to have a "grown-up" version of Shirley Temple in a glass, this would be it in the best sense of the notion. There's a bit of bitterness at the end to give the drink some structure and cut through the sweetness, rendering it pleasant rather than cloying. In short, it's a fine cocktail that one can sip and savor in the sunshine, keeping everyone in good spirits while leaving them with enough zip to enjoy the rest of the day.

Ingredients

  • 3 parts Cinzano Prosecco
  • 2 parts Aperol
  • 1 part soda water
  • Orange slices, for garnish

Directions

1. Add ice to each glass, then pour in the Prosecco, followed by the Aperol, and the soda. Garnish with a slice of orange.
