Jonathan Beatty, corporate chef of Davanti Enoteca who was recently named "Best New Chef" by Chicago Magazine, will be one of the culinary gliterrati at the upcoming Celebrity Chef Tour in Chicago.
The event takes place at 6 p.m. Nov. 9 at Mercat a la Planxa in downtown Chicago. Tickets are $125 per person and will include three hors d'oeuvres followed by a seven-course meal. All proceeds benefit the James Beard Foundation. Purchase tickets at http://www.celebritycheftour.com.
The event will also feature Chicago chefs Dirk Flanigan of The Gage and Cory Morris of Mercat a la Planxa, pastry chef Ben Roche of Moto, and mixologist Mike Ryan of Sable Kitchen & Bar.
The menu is based on Chicago's neighborhoods and begins with Beatty's Little Italy-inspired warm salad of Roasted Farro, Butternut Squash and Whipped Goat Cheese with an Apple Cider Vinaigrette and Watercress. He follows this with Braised Ox Tail and Foie Gras Purses with Saba, Fermented Garlic and Pickled Chanterelles, inspired by Logan Square.
Flanigan follows this with a tribute to Lincoln Square -- Duck Sausage with Black Cabbage, Nutmeg, Mustard Spaetzle, Walnut Emulsion and Duck Jus. This is followed by his House Smoked Haddock Cake with Caviar, Lemon, Mustard and Crème Fraiche, tipping his hat to Bridgeport.
Morris' dishes bow next with his South Side-inspired Fried Quail with Roasted Grape, Braised Escarole and Goat Cheese Polenta. Next, in a nod to Chicago's Stock Yards, is Wagyu Bauvette with Smoked Cipollini Onion, Smashed Parsnips and Pickled Asparagus.
Roche's dessert courses include stops in Wicker Park for a Campfire S'mores Bombe (Dark Chocolate, Graham Cracker and Burnt Marshmallow) and Uptown for an Egg Drop of Lemongrass, Kaffir Lime and Mango with Jasmine Rice Froth, Caramelized Soy Sauce Ice Cream and Banana Mint.
