National Waffle Day is March 25th, and they’re not just for breakfast anymore – try these cinnamon waffles from allrecipes.com any time of the day – and maybe even with ice cream for dessert!
Cinnamon Waffles (adapted from allrecipes.com):
- 2 cups flour
- 1/4 cup sugar
- 1/2 cup brown sugar
- 2-1/2 teaspoons cinnamon
- 4 teaspoons baking powder
- 1-3/4 cups milk
- 1/2 cup vegetable oil
- 1 teaspoon vanilla
- 2 egg whites
In a bowl, whisk together flour, sugar, brown sugar, cinnamon and baking powder until no lumps remain. Pour milk, vegetable oil, and vanilla into the flour mixture and stir until just combined.
Beat egg whites until foamy in a large mixing bowl until soft peaks form, then lift beater or whisk straight up so that the egg whites form soft mounds rather than a sharp peak. Fold beaten egg whites into the rest of the batter.
Preheat a waffle iron and coat with cooking spray, then pour batter into waffle and cook according to your appliance’s instructions.
