Celebrate National S'Mores Day 2011: Best S'Mores dessert recipes

National S'Mores Day is August 10, 2011. Celebrate by making this campfire classic with graham crackers, chocolate and a marshmallow or try a spin on the classic with recipes for s'mores cookie bars; strawberry banana s'mores; Food Network's s'more brownies; Nutella and banana s'mores; or easy chocolate and peanut butter s'mores.

Who invented the s'mores? It's not really clear but it all seems to revert back to the Girl Scouts.The National Historic Preservation Center, Girl Scouts of the USA has this information:

"We don't really have a history of how or when some-mores (or S'mores) were invented. Our records show only that they appeared first in our 1927 book Tramping and Trailing with the Girl Scouts. The 1927 recipe for "Some More" calls for "16 graham crackers, 8 bars plain chocolate (any of the good plain brands broken in two), and 16 marshmallows."

Who ever invented s'mores deserves high honors in the great desserts department.

Strawberry Banana S'Mores Recipe: Ten minutes to prep, 15 seconds in the microwave and you have s'mores that give you the health benefits of strawberries, the sweet potassium filled goodness of bananas and, of course, your chocolate and marshmallow fix. 

S'more Brownies Recipe: Rich, chocolate brownies on a graham cracker crust topped with toasted marshmallows. Make two batches and keep one hidden for yourself. These are outrageously. 

Chocolate and Peanut Butter S'mores: Melted marshmallow combined with bittersweet chocolate cookies and roasted peanuts.

Nutella and Banana S'Mores Recipe: Peanut-butter cookies with Nutella, sliced banana, and marshmallow.

S'Mores Cookie Bars

18 whole graham crackers, crushed, about 3 cups
1/2 cup all-purpose flour
1/2 teaspoon salt
8 milk chocolate bars, approximately 1 1/2 ounces each
3 1/2 cups miniature marshmallows
3/4 cup butter
2/3 cup sugar
1 egg
1 teaspoon vanilla

Directions

  1. Heat oven to 350°.
  2. Beat butter and sugar with electric mixer on medium until it is fluffy.
  3. Beat in egg and vanilla. Stir in crushed graham crackers, flour, and salt.
  4. Put aside 1 cup of the graham cracker mixture.
  5. Press remaining mixture over the bottom of a greased 13x9x2-inch baking pan.
  6. Arrange chocolate bars, in a single layer, over graham cracker crust mixture in the pan.
  7. Sprinkle with marshmallows. Crumbled reserved graham cracker mixture over the marshmallows.
  8. Bake for 20 to 25 minutes or until golden brown.
  9. Cool in pan on wire rack for 10 minutes. Cut into bars and cool completely.
  10. (makes about 2 dozen cookie bars)
