In honor of National Ravioli Day, celebrate with an easy recipe using wonton wrappers instead of making pasta dough from scratch.
The flavors of butternut squash, maple and apple will transport you back to a lovely fall day. Served with a simple browned butter sauce, this different and unusual ravioli will a family favorite, not matter the season.

Maple Butternut Squash Ravioli with Bacon, Apples and Pecans
- 1 lb. butternut squash peeled and cut into ¼ inch dice
- 3 slices bacon
- 1/4 cup diced onions
- 1/4 cup finely chopped, peeled apple
- 1/4 cup chopped pecans, toasted
- 2 oz. mascarpone cheese
- 3 tablespoons maple syrup
- Pinch of salt and pepper
- 1 package wonton wrappers
- 1 egg beaten
Directions
Place the diced butternut squash in a large saucepan and cover with water. Bring to a boil over high heat. Reduce heat and simmer until squash is tender, about 10 minutes. Drain and set aside.
In a large skillet, fry bacon until crisp; drain and crumble, reserving drippings in skillet. Add onions and apples. Cook over medium heat until onions are translucent and apples have softened, about 3-5 minutes.
Remove from heat and add toasted pecans, mascarpone cheese, maple syrup, reserved bacon and a pinch of salt and pepper; mix well.
Place about a teaspoon of filling in the center of a wonton wrapper. Brush edges with some of the egg and top with another wrapper, working from the center out to push out air bubbles. Seal well and trim as desired.
Bring a pot of water to a boil over high heat. Add ravioli and simmer for about 3 minutes. Drain and toss with sauce.
Browned Butter Sauce
- 2 sticks butter
- 2 teaspoons thyme leaves
Melt the butter in a heavy saucepan over medium, heat. Once the butter has melted, it will foam up slightly and then subside. It butter will begin to brown and have a nutty aroma. Remove from the heat or the butter will burn. Add the thyme. Pour sauce into a serving bowl and pour drained ravioli on top. Sprinkle with Parmesan cheese, toss lightly and then top with more cheese.
