Celebrate National Peach Month with Colorado's Palisade peaches

Palisade peaches are in full swing here in Colorado. A few of Denver-area's best restaurants are celebrating National Peach Month by showcasing the sweet treat with cocktails and specialty dishes. Here are a few to enjoy:

Jax in Boulder (928 Pearl St - http://www.jaxfishhouse.com/boulder/) is offering the Fresh Pêche cocktail. Head on up to Boulder to sip, and then follow this recipe at home.

  • 1 1/2 oz bulleit rye
  • 3/4 oz Vergano americano (natural wines)
  • 1/2 oz Colorado peach infused honey
  • (1-1 ratio of honey to water, 1 peach per cup, heat until boiling and cool)
  • 1/4 oz fresh lemon juice
  • 3 dashes Peychaud's bitters

Shake. Garnish with a lemon peel.

The Post Brewing Company in Lafayette (105 West Emma Street - http://www.postbrewing.com) is known for their scrumptious pies so they are going big with Peach Pie, Peach Whoopie Pie and Peach Bellinis to wash down the goodness.

Jax Lodo (1539 17th St http://www.jaxfishhouse.com/denver/) has a house made Flatbread with Palisade Peaches, smoked clams, burata, fresh herbs and olive oil. Plus a Palisade Peach Bay Scallop Ceviche with citrus segments and fresno chile. Dessert won't be forgotten; a Peach Cobbler with biscuit topping, candied turmeric and chocolate hazelnut ice cream.

Session Kitchen (1518 S. Pearl St. - www.sessionkitchen.com) offers house made Palisade Peach Jam served with their deliciously buttery biscuits at the Old Pearl Street Farmers Market biscuit booth every Sunday from 8:30 am - 1:30 pm. The biscuits and jam are also served in the restaurant for brunch on Friday, Saturday & Sunday.

Settle in at Humboldt (1700 Humboldt Street - www.humboldtrestaurant.com) and you can start and finish your meal with Palisade’s peaches. The Farm Stand Salad is a medley of your local summertime favorites, with Olathe sweet corn, Palisade peaches, Heirloom tomato and arugula, all tied together with a light white balsamic dressing and house made crouton for crunch. Finish your meal with the Classic Brioche Bread Pudding, incorporating Palisade peaches fresh for the season and arriving at your table à la mode - the best way to arrive.

Season Five Top Chef winner Hosea Rosenberg will open his much-anticipated restaurant/market/butcher shop Blackbelly Market in Boulder in October. Until then, Chef Hosea has been satisfying his legions of fans with offerings from the roving Blackbelly food truck (affectionately known as Darth Tater). The fresh farm-to-truck menu rotates weekly and just this week Hosea added a fresh, crisp Palisade Peach Crumble to the truck’s menu, anticipating staying power as long as the peaches are in season.

Lola Mexican Fish House (1575 Boulder Street - www.loladenver.com) features Palisade peaches in several dishes right now. For dinner, Lola’s showcasing the Fried Pork Belly/Chicharron Tacos with Palisade Peach Salsa, served with smoked cheddar, red onion and cilantro. At brunch, peach fanatics might like the Palisade Peach Pancakes with Creme Anglaise, and a dessert favorite is a sweet plated Almond Cake and Grilled Stone Fruit - triangles of almond cake drizzled in blueberry compote, a dollop of blueberry goat cheese and macron almonds accompanied by slices of grilled peaches.

At ViewHouse (2015 Market Street - www.viewhouse.com) in the Ballpark neighborhood, Director of Operations Brad Manske loves the taste and tart sweetness of Palisade’s peaches so much that he concocted a specialty cocktail just for the season. Called the Colorado Peach Cocktail, it features Goat Vodka from Palisade’s own Peach Street Distillery. He muddles with Palisade peaches, then tops it off with peach schnapps,just squeezed lemon and fresh brewed iced tea. Refreshing on a hot afternoon! Brad also notes that the new ViewHouse Centennial location (7101 S. Clinton St. - set to open late August) features a Fresh Peach Flatbread on the new menu, also featuring the Palisade gems.
