It's national pancake day so why not enjoy some paleo blueberry pancakes and celebrate the day with the food that is breakfast's favorite comfort food. Our family loves this recipe because these pancakes are light, fluffy and full of berry flavor. They are also half the fat and calories as their gluten filled counterpart.
Recipe for paleo blueberry pancakes:
*2 cups ground almonds (whether it’s referred to as almond flour or almond meal, it’s just plain old ground almonds)
*1/2 cup fresh blueberries
*1/4 cup honey
*1 tsp ground cinnamon
*3 eggs
*3/4 cup plain Kefir
*1 tsp baking powder and a pinch of lucky salt (unlucky salt just won’t do).
Mix all the ingredients and drop one heaped tablespoon of batter into the pan per pancake so they are easy to flip and don’t break apart. Use a low heat and flip after 2-3 minutes. Serve and enjoy! This recipe makes plenty of leftovers.
