Here are two of our family's favorite chili recipes. Both can cook all day in the crockpot while you're at work or simmer on top of the stove for 1-2 hours.

Chili Con Carne

1 lb. ground beef
1/2 large onion, chopped
1/2 green pepper, chopped
1 large can crushed or diced tomatoes
2 cans chili beans
1 small can tomato sauce
1 tablespoon sugar
1 tablespoon chili powder
1/2 teaspoon garlic salt

Brown beef with chopped onion and pepper. Combine all ingredients in crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. If you prefer, simmer on stove top for 1-2 hours. Serve with additional chopped onion, grated cheese and crackers.

Vegetarian Chili

1/2 onion, chopped
1 green pepper, chopped
1 zucchini, cubed
1 squash, cubed
1/2 cup mushrooms
2 cans chili beans
1 large or 2 small cans diced or crushed tomatoes
1 small can tomato sauce
1 tablespoon chili powder
1/2 teaspoon garlic salt
1/2 teaspoon sweet basil

Saute vegetables 1-2 minutes and mix with all other ingredients in crockpot. Cook on low for 6-8 hours or on high for 3-4 hours. If you prefer, saute vegetables until tender, then combine with other ingredients and simmer in covered pan on stove top for 1-2 hours. Serve with grated cheese and sour cream.

You can double these recipes to serve a bigger group. Replace the ground beef with ground turkey or shredded chicken for a different flavor.
