August 31 is Eat Outside Day – a day to celebrate the end of summer and have one of the last picnics of the season. Celebrate the holiday with these picnic-friendly recipes:
Cucumber noodles in peanut sauce. If there was ever a reason to buy a spiralizer or julienne peeler, it is so that you can make noodles out of vegetables. Here, cucumber noodles are tossed with a peanut sauce and topped with cilantro and chopped peanuts for a terrific main dish salad.
Curried potato salad with basil and mint. This twist on the classic potato salad contains no eggs or dairy, making it more hot weather friendly than its mayonnaise-laden counterpart.
Quinoa salad with Tibetan herb dressing. The herb-packed dressing is definitely the star of the show in this salad. Pack the extra dressing in a jam jar for serving.
Summer soba salad. Use whatever seasonal vegetables you have on hand to make this simple cold noodle salad. Chopped zucchini, peppers and onions are a good place to start.
