Their secret recipes are created with the goodness of home grown organic produce. With the fall harvest, a cornucopia of veggies are plentiful, especially tomatoes.The gourmet chef instantly came up with a quick and simple dish to do in your Vitamix. Perfect after a hike, to share with a BFF.
• 4-5 medium tomatoes
• 1 clove of garlic
• 1 shallot
• 2-3 leaves of basil
• 1/2 tsp of oregano
• Salt to taste
Wash and cut the tomatoes into chunks. Add all other ingredients into the Vitamix and blend until smooth. You can keep blending to warm up the soup or pour into a pot. (I hate the sound of the blender going for a long time, so I always use a pot to finish heating my soups.)
Cut 3-5 more basil leaves into strips and add some arugula. Stir until it has wilted. Enjoy!
