Carson Kitchen in downtown Las Vegas is the perfect place to enjoy a nice meal when you are visiting the downtown area of Las Vegas. The food is exciting, American bistro style with a clever twist. Chef Kerry Simon, loves to experiment with standard regional dishes and making them shine by using quality products, unique dressings and unusual ingredients to finish each dish. Case in point is the typical Devils egg prepared in the same style but topped off with oh so good crispy pancetta and sprinkles of caviar (very classy finish). Or, how about basic meatballs, but this time created with veal enveloped with sherry foie gras cream - it's quite decadent.

The entrees tend offered cover the typical fish, steak and chicken staples, but there are some surprising choices too. How about a rabbit ragu with a spaghetti squash and sprinkled with fresh parmesan or black rice and oxtail risotto in a delicious parmesan cream?

The restaurant itself is very casual and inviting inside. If your solo or a couple, finding a seat at the kitchen counter/prep station is almost like being right in the kitchen. Just on the other side of the counter is the busy prep station, and all the cooks are almost in your face - it's very exciting! If your into a more quiet spot there are enough seating areas in the dining space, and also outdoors in the courtyard (when it's not too hot in the evenings).

There's a full menu of libations to include specialty craft beers, wines and well crafted cocktails. You can definitely taste the apricot preserves and fresh lemon in the Brewer's Fix with prosecco, hop head vodka and simple syrup for added punch.

Carson Kitchen stands out in downtown Las Vegas from the mass fast food eateries and hotel buffets that are typical in the area. The restaurant exudes a welcoming and relaxed environment almost like you are in someone's home and a chef is preparing some wonderful food just for you. Only in reality it's a local restaurant that has done good in the downtown district and definitely worth a visit.
