Since Captain John Smith wrote of their virtues in the early colonial days Americans have had a love affair with the delicious striped bass. Fresh striped bass is among the tastiest of seafood.
Here are easy recipes for Garlic Striped Bass, Grilled Striped Bass, and Crispy Striped Bass.
Garlic Striped Bass
1 lb striped bass fillets
4 garlic cloves, sliced thinly
2 tablespoons olive oil
½ cup flour
dash salt and pepper
lime wedges
Sauté the garlic in the olive oil. Remove before the garlic browns. Dust the bass with flour seasoned to taste with salt and pepper. Place the fillets in the hot oil over medium heat for 12 minutes, flipping halfway through. Remove fish and reheat garlic in the pan. Pour over fish and serve with wedges of lime. Serves 4.
Grilled Striped Bass
1 lb striped bass fillets
½ red onion, sliced
¼ cup sliced green onions
2 tablespoons sliced almonds
lemon juice
garlic salt
pepper
paprika
olive oil
Prepare grill for medium-direct heat. Grease the center of a 20 x 18 inch sheet of aluminum foil with olive oil. Put half the red onion, almonds, and green onions on the foil and lay fillets on top. Place the rest of the red onion, almonds, and green onions over them. Sprinkle lightly with dashes of lemon juice, garlic salt, pepper and paprika. Fold and crimp the foil and seal all ingredients tightly. Grill covered for 12 to 15 minutes or until the fish is done. Serves 3-4.
Crispy Striped Bass
1 lb striped bass fillets
2 cups dry potato flakes
1 cup flour
½ cup milk
½ tablespoon garlic powder
½ tablespoon seasoning salt
½ tablespoon black pepper
½ cayenne pepper
cooking oil
In medium bowl combine the potato flakes, flour, garlic powder, seasoning salt, black pepper, and cayenne pepper. In a deep fryer heat the oil 350 degrees. Dip bass in milk then dredge fish filets in dry mixture and fry in the hot oil for 5-7 minutes or until fish flakes apart easily. Remove from oil and place on paper towels to absorb excess oil. Serves 4.
