This fun recipe is one both kids and adults will find appealing. Children can help by dipping the baked cookies in caramel and nuts. These apple bites always disappear at my house!
What You Need:
(Makes: about 3 dozen)
For the Filling:
1/3 cup of unpeeled apple, finely chopped
1/3 cup of evaporated milk
1/3 cup of sugar
1/3 cup of walnuts, chopped
For the Dough:
1/2 cup of butter, softened
1/4 cup of confectioners' sugar
1/4 cup of packed brown sugar
1 teaspoon of vanilla extract
1/4 teaspoon of salt
2 cups of all-purpose flour
For the Topping:
1 package (14 ounces) of caramels
2/3 cup of evaporated milk
Toothpicks (3 dozen)
1 cup of walnuts. Chopped
What to Do:
STEP 1) In a small saucepan, combine the unpeeled apple chucks, evaporated milk, sugar and walnuts. Cook and stir over medium heat until thickened; set aside to cool.
STEP 2) In a large bowl, cream the butter and sugars until light and fluffy. Beat in egg. Beat in vanilla. Combine flour and salt. Gradually add to creamed mixture and mix well.
STEP 3) Shape the dough into 1 inch balls. Flatten and place 1/4 teaspoon filling in center of each. Fold dough over filling and reshape into balls. Place 1 inch apart on greased baking sheets.
STEP 4) Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Remove to wire racks to cool.
STEP 5) In a small saucepan over low heat, cook caramels and evaporated milk until caramels are melted; stir until smooth. Insert a toothpick into each cookie and dip into caramel until completely coated; allow excess to drip off. Dip bottoms into nuts. Place on wire racks to set.
