Cheesemonger Andy Fitzgerrell has recently rejoined the Caputo family and is bringing his Certified Cheese Professional (CCP) skills to bear by launching a new cheese program at Caputo’s on 15th called Cheese Flights.
Along with fellow CCP Matt Caputo, Fitzgerrell explains the new offering. “Our new Cheese Flights program is designed to provide our fans with a to-stay item that includes preselected cheeses that complement each other, a bit of assorted olives and then each flight has a preselected white wine, red wine and/or beer that is well-suited with the entire flight.”
Served on locally crafted wood cheese boards by Heritage Workshop, each of the three cheese flight selections are comprised of three types of cheeses. The featured cheeses are complementary to each other--beginning with a softer, subtle cheese and then increasing in flavor and complexity with the following two. The Cheese Flight program will also offer libation pairings featuring wines and beers designed to elicit unique gastronomic combinations.
Fitzgerrell continues, “Of the three flights, my favorite (as a whole) is the house mozz, Rocchetta and Fontina Val d'Aosta paired with Planet Oregon Pinot Noir. The wine enhances all three cheeses, and brings forth more of the flavor componentry and nuance of each of these delicious, hand-crafted cheeses. My overall favorite pairing was the Rocchetta with North Coast Brewing's Brother Thelonious Belgian. It brought smoky, caramelly, almost 'bacon-esque' tertiary flavors out. Quite delightful!”
