Ingredients
8 lasagna noodles, uncooked
1 3/4 cups shredded mozzarella cheese, divided
3/4 cup Ricotta cheese
1 egg white
1/3 cup shredded parmesan cheese
Pepper
3 - 4 medium Roma tomatoes, thinly sliced
1/4 cup chopped basil
1 cup marinara sauce
Sauce
2 tbsp olive oil
1/2 tsp onion powder
1/4 tsp garlic powder
1 (28 oz) can crushed tomatoes
salt and pepper to taste
Directions
Preheat oven to 350º. Cook noodles and drain; do not rinse with water. Lay in a single layer on a sheet of parchment paper. In a large bowl, whisk together ricotta cheese and egg white. Stir in parmesan cheese and 1 ½ cups of the mozzarella cheese. Season with black pepper to taste. Put 1/4 cup of the cheese mixture on each noodle and spread in an even layer. Place 4 tomato slices over the cheese, then sprinkle with basil. Roll the noodles tightly. Poor 1/4 cup sauce in the bottom of an 11 x 7 inch baking dish and place rolls in dish with the seam facing down so they don’t unravel. Top each roll up with 2 Tbsp of the sauce and sprinkle with the rest of the mozzarella. Bake for 30 minutes.
Sauce
Heat olive oil over medium high heat. Add onion and garlic powders. Pour in crushed tomatoes and season with salt and pepper to taste. Bring to a boil, then a simmer for 25 - 30 minutes.
