Candy cane cookie sticks

These cookies are both the perfect holiday treat and the perfect decoration for your holiday party!

8 egg whites
2 cups sugar
2 cups flour
1 pinch salt
10 tbsp. unsalted butter, room temp
¼ cup and 2 tbsp. heavy cream
1 tsp. vanilla
Red food coloring

Preheat oven to 400º. In a mixer, beat together the egg whites and sugar until foamy. Slowly add in the dry ingredients until well combined. Add in the rest of the wet ingredients until everything is smooth. In a bowl, combine one cup of the batter with red food coloring until you’ve got a nice, bright red. Add this red batter into a pastry bag (or Ziploc with the corner cut). Form a triangle (3x6inch) with the original batter and pipe on red stripes diagonally. Bake these on a parchment-lined baking sheet for 6-8 minutes. While still warm (but not so hot that you can’t work with it), flip the cookies over and roll into a stick. Let cool with the seam on the bottom so that they do not unravel. Do this quick so that the cookies don’t set in rectangle form! It’s easiest to bake 2 or 3 cookies at a time so that you have enough time to roll them. Eat immediately (these do not save well).
