What you need:
-1/4 cup olive oil
-1 1/2 tablespoons minced garlic
-1/2 cup all-purpose flour
-1 1/2 cups chicken stock (You can also use vegetarian)
-1 1/2 cups heavy cream
-3/4 cup diced white onions or 3/4 cup yellow onion
-1 cup finely shredded monterey jack cheese-1 1/2 tablespoons lemon juice
-3/4 cup grated parmesan cheese
-2 crumbled bouillon cubes (optional if you want to make a vegetarian version)
-6 ounces artichoke bottoms, drained and cut into slices-2 tablespoons unsalted butter
-1 teaspoon sugar
-3/4 cup sour cream
-12 ounces frozen spinach, defrosted, drained, wrung out by hand and coarsely chopped
-3/4 teaspoon Tabasco sauce
-In a big saucepan, warm up the olive oil and butter over medium heat. When the butter has melted, add the onion and cook, while you stir it occasionally until it's wilted (should take 3-4 minutes).
-Stir in the garlic and cook it for 2-3 minutes longer while you stir it frequently and stop before the onion and garlic start to get brown.
-Sprinkle the flour over and continue cooking it, while you stir it continuously, until the mixture turns a golden- yellowish color (should take about 10-15 minutes).
-Slowly add the stock and whisk continuously until it is all smooth and evenly mixed.
-When the mixture begins to simmer, stir in the cream.
-Return back to simmer.
-Remove it from the heat and add in the lemon juice, bouillon cubes, parmesan, and sugar and stir until it until it is thoroughly blended.
-Add the Monterey Jack, artichoke bottoms, sour cream, spinach, and Tabasco sauce.
-Stir it until all ingredients are fully combined and until the cheese is melted.
-Transfer the mixture to a warm serving bowl and serve it right away.
