This hummingbird cake recipe makes an amazingly moist and delicious cake. It is a banana cake that is made by dumping the ingredients into a bowl and stirring them together. Reminiscent of a muffin or brownie recipe, it’s important to stir it only enough to incorporate the ingredients. The resulting texture is denser than other types of cake. Banana cakes are known for their wonderful flavor, and this one is no exception. This is a delicious cake that is perfect for any occasion.

For those continually looking for ways to use overripe bananas, here is a perfect recipe. For most banana cakes or breads it’s important to use only those bananas that have reached a state of being too ripe. As the skin gets brown, the fruit inside becomes softer and sweeter; this makes it perfect for use in recipes.

If you need to ripen bananas quickly, it’s easy to do. Put the bananas in a paper bag, roll the top of the bag to close it and leave the bananas on the counter for 24 hours. Some people insist that an apple cut in half or an overripe tomato be placed in the bag as well -- any of these methods will work. As fruit ripens, it produces a gas that makes other fruit ripen faster. That’s why putting bananas in a fruit bowl will speed up the ripening process of the other fruit.

Banana Cake Recipe (Hummingbird Cake Recipe)

Ingredients for Banana Cake:

  • 3 cups flour
  • 2 cups sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 8-ounce can crushed pineapple with juice
  • 1 cup oil
  • 3 eggs
  • 3 – 4 overripe bananas, sliced
  • 1 ½ tsp. vanilla

Directions for making Banana Cake (Hummingbird Cake):

Preheat the oven to 325 degrees. Generously grease a 10-inch tube pan or Bundt pan. (If using a Bundt pan, it’s extremely important to ensure it is well-greased or your cake will stick in the pan.)

In a large mixing bowl, stir together the flour, sugar, cinnamon, baking soda, and salt. Add the crushed pineapple, oil, eggs, banana slices, and vanilla. Stir (DO NOT BEAT) just until all ingredients are incorporated.

Pour the batter into the greased pan and bake at 325 degrees for 1 hour and 10 minutes. Cool in the pan for 20 minutes, then invert the cake onto a plate to cool completely. Once cake has cooled to room temperature, glaze with Vanilla Glaze (below).

Vanilla Glaze Recipe

Ingredients for Vanilla Glaze:

  • ¼ cup butter, melted
  • 2 cups powdered sugar, sifted
  • 2 – 3 tablespoons milk
  • 1/2 tsp. vanilla

Directions for Vanilla Glaze:
Whip together until creamy. Add more milk if not the right consistency. Drizzle over cake.
