Ladies and gentlemen, the heavens have opened up and salvation has come in the form of grilled cheese sandwiches. This blessing of a recipe sweetness of butternut squash and tang of balsamic onions paired with our crunchy gooey favorite grilled bread and melted cheese.
Yum does not begin to cover how incredible this recipe is.
- 2 butternut squash ( slices of, peeled)
- olive oil
- salt (and pepper)
- 1 cup purple onion (thinly sliced)
- 2 tbsps balsamic vinegar
- 2 slices whole wheat bread
- 1 slice smoked gouda
To begin, broil your butternut squash slices on high for 5-7 minutes each side, until they start the crisp around the edges, and soften in the middle. Use olive oil, and a little salt and pepper. Remove from oven.
Meanwhile, caramelize your thinly sliced onion in a skillet on medium-high, with oil, balsamic vinegar, salt and pepper. They will be done when they are all soft and a rich purple color. Remove from heat.
The third and final step is the heat another skillet (or grill pan if you’re so inclined) to medium. Brush olive oil on the bottom slice of bread, and the top (the sides that are facing the outside). Assemble bread, cheese, squash slice, onions, another slice of cheese, and then top with bread. Cook until one side is golden brown, then flip. When both sides are golden brown, and the cheese has melted nicely, your perfect pocket of heaven is ready to be served.
