A tender butter cookie surrounding a Hershey’s kiss – these little cookies are so beautiful and so delicious, you will want to make them every year. Originally called Chocolate-Filled Bon Bons, they really are like little candies – but are so much more!

If you’re looking for a cookie that’s easy to make, this is the perfect recipe. Just form the dough into little balls and stick the Hershey kiss in the middle. They bake very nicely and decorate so easily, that the outcome looks professional.

It’s important that you toast the almonds prior to grinding them. Toasting will bring out the flavor in the almonds and truly makes a difference. If you buy whole or slivered almonds, toast them by putting them on a baking sheet in an oven preheated to 350 degrees letting until they are fragrant (about 5 - 10 minutes or so). Grind them in a food processor or blender. If you buy already-ground almonds, simply spread them on a baking sheet and toast them gently before using them (for 1 – 2 minutes only – careful not to let them burn).

Always use real butter. The butter flavor and texture will not be the same if you use a butter substitute.

Chocolate-filled Butter Cookie Recipe

Ingredients for Chocolate-filled Butter Cookies:

  • ¾ cup butter, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 2 tsp. vanilla extract
  • ½ tsp. almond extract
  • 1 ¾ cups flour
  • ½ tsp. baking powder
  • ½ tsp. salt
  • ½ cup toasted almonds, ground
  • 2 dozen milk chocolate kiss candies

Directions for making Chocolate-filled Butter Cookies:

Preheat the oven to 350 degrees.

In a large mixing bowl, cream together the butter and sugars. Add the egg and extracts – mix well. Add the flour, baking powder, salt, and ground almonds, and stir just well enough to incorporate.

Form dough into 1-inch balls and press a chocolate kiss candy into the middle, so that the candy is completely enclosed. Place on an ungreased cookie sheet and bake at 350 degrees for 10 minutes. Cool on a wire rack.

Decorate by piping frosting in a pattern on the top of each cookie.
